Like many American children watching Julia Child on PBS was my first inkling that there may be more to cooking than what Mom was dishing up each night. Here was food that did not involve roasts cooked into submission or recipes incorporating processed cheese food, whipped cream from a can, jello or marshmallows. As a young adult Julia Child remained in the back of my mind as I learned how to cook for myself and my family. Oddly my collection of cookbooks never included this one until, like many others, went to see 'Julie and Julia'. I tracked down this first volume of Child's magnum opus and discovered so many have discovered before me - this is a GREAT COOKBOOK.

Child's directions are quite clear, gently leading in logical, easy to follow steps through the recipes. Each section is prefaced with introductions and explanations of not only technique but theory and selection of ingredients. The book in general strikes a happy medium of writing in a simple enough manner that a novice cook can follow while still being entertaining and engaging enough not to bore a more a more accomplished one.

That is not to say though that there are not problems. This book first appeared nearly fifty years ago and times have changed. No mention is made of microwaves or slow cookers (although Julia apparently had access to those then cutting edge appliances - blenders and food processors). Child was never concerned with calories or grams of fat only with the delicious end results. The most glaring change though is that the recipes assume that the cook has ample room to store and income to purchase an amazing array of specialized equipment and has several hours to devote to putting a meal on the table.

Even with this problems though this is a wonderful cookbook. It may not be practical to use on a daily basis but for those times when only the best will do this is a must.

I grew up watching Julie Child's program from time to time, but as an adult I spent years feeding my kids pizza, tacos, and hamburgers thinking that was the easy way to go. I must admit, it took watching the movie Julia and Julie to pique my curiosity enough to purchase the book and try what I mistakenly thought would be difficult French cooking. Now that I use it ALL OF THE TIME I'm sorry that I waited so long to get this gem. Sure, there are some recipes that you won't ever use, but if you want to learn how to make basic, step-by-step, absolutely fabulous meals that turn out perfect EVERY TIME you'll want to own this cookbook. My family couldn't care less about tacos and pizza now. Everyone shows up for dinner, oohs and ahhs through the meal, and if there are any leftovers at all they disappear late that night. The only down side is that no one wants to eat out any longer because you can't get this kind of flavor and quality on any menu in town. Buy the book and cook baby!

I bought this after watching the movie, Julia on Julia...which I loved. So far I have made one recipie, the pate fois gras and it was amazing. It's all a matter of getting the correct ingredients...which no one has around the house normally...heavy whipping cream, cognac, et...but I had fun. I'm not making any attempt to make all these in one year. Maybe, in the rest of my life time...! They are fattening and you need to take your lipid reducing medication before indulging! BUTTER BUTTER BUTTER!

Whether you want to learn how to cook well or to master french cooking, this is the perfect book. Every term you need to know is defined at the beginning of the book, giving the dictionary meaning AND the how-to. Every chapter provides a comprehensive description of its subject along with detailed recipes, variations and troubleshooting recommendations. This is not the book for someone wanting a quick recipe--there are no shortcuts. But if you want to learn how to cook wonderful food, it's the best.

I just bought my third copy of "Mastering the Art of French Cooking, Vol. 1" because I've used my first two editions so heavily over the years that they fell apart and had to be replaced.

Like Julie Reed, I started with leek and potato soup and worked my way through the book from there (no, I haven't cooked all the recipes, and no, I didn't try to do all of them in one year).

What I love about this cookbook is that if you learn a technique, it opens up all sorts of recipes to you and is organized that way. So if you learn to make a quiche, you can make a tarte. If you learn to make mayonnaise, you can make hollandaise. And so on. With the illustrations and the detail provided in the master recipes, it would be hard to go wrong.

Lastly, her recipes have my favorite recipe words in them "Can be made ahead to this point." Those words are every cook's salvation!

Julia Child is brilliant in the layout of this fabulous cookbook. The sidenotes suggesting drinks and accompanying side dishes with each recipe is marvelous. If I'd never known what a wisk or oven-proof dish was, I could place a meal before friends and family that would bring a round of applause after the first taste. Thank you Julie-Julia for such a reveal in your movie to inspire women to rediscover the joy of toiling in the kitchen again.
