The delivery was outstanding just outstanding. Received product before I expected. Next Immediately started to sharpen very old Knives. 50 years plus. My mother has this 12 long blade harden steel she has used and resharpened by hand many times for cutting frozen meat and just about everything else. The Chef's Choice 300 made the blade razor sharp.... I mean sharp. Having sharpened on a bench grinder and wet stone in the past this very special Knife, the 300 just sharpened and then Honed that 12 inch blade to a sharpness that you could reduce the effort of cutting raw or cooked meat fruit vegies and you name it with 50% less wrist force/load. Small knives big knives all took an razor edge using the 300 Chef's Choice. A perfect gift for any and all at Christmas. Simple to use cost effective, and the most important point able to renew knives that the Household Cook likes/loves, and has a long history of Kitchen Service. Food prep and delivery is not just in the Cooking Technics, but also in effective food prep. This is a perfect Thanksgiving for Mom and Dad. This is a great sharpener. However, you must follow the directions to correctly hone your knives the first time. That means twenty passes the first time. After that, you can pass the knife through the sharpener a couple of times. I am not a beginner; I've been in and around the restaurant business for over fifty years and have a collection of knives with both high and low nickel content. The high nickel content knives (polished/shiny) need to be honed on an electric sharpener; it just takes too long on a stone and not many people can correctly steel a knife.
I bought this over 20 years ago and it has served me very well. Once you have the knives resharpened to match the honing angles of the sharpener it is very easy to keep them very sharp. Only problem I've had is with one knife that has a metal tang that doesn't allow the very back of the knife to be sharpened.
I'm ordering another one as this one is now going into the RV and the replacement will be at home.

Product is extremely easy to use and operated just as indicated in the online advertisement. Used it on variety of knives (this model is not usable on serrated knives) with lengths from two to twelve inches. All were sharpened effortlessly with excellent results. The ordering process was easy and unambiguous. The sharpener was delivered in less than three days.
I bought one of these a couple of years ago and I haven't been able to get my knives properly sharp from using it, no matter how long I have spent carefully following the instructions. My partner couldn't believe it wouldn't work and, thinking I might be too easily put off, tried it too, using as many alternative artful variations in technique as he could think of. It didn't work for him either. I ended up throwing it out.
Now I use a simple sharpening stone, which is far more effective and environmentally friendly. Better for your arm muscles too.
Slow and a little hard to use. Does a decent job IF you do what they tell you to do then you get a decently sharpened knife. Use it on protected surface since slivers of the metal shed as it is sharpened.
