I am a new user of a bread machine. I did my research and bought the Zojirushi. My bread came out extreamly heavy. I had to keep adjusting my flour content. So far it is getting lighter and lighter each time I reduce the flour content. I want it more like store bought bread. So far I am happy with the machine. I would suggest it to anyone looking to buying a bread machine. I called the help phone # and the person was very helpful with my problem of the weight of the bread.The help section of the book should have more trouble shooting solutions. I had the machine a little over 1 month at the time of this posting.

After a very good experience with a Breadman model I decided to upgrade to this Zojirushi breadmaker. I liked the idea of making more traditionally shaped loaves and thought it would be worth the money since I use my Breadman so frequently. What a disappointment. The dough is not even. I need to reach in to reshape the loaf over both paddles. When I add raisins, nuts, etc. They don't incorporate into the dough evenly. I need to pull the dough out and manually add these items. Even a simple white bread recipe is disappointing because the loaf is not evenly shaped.
I would not recommend this. My hope is that the Breadman brand will come out with a traditionally shaped loaf bread maker. Sorry.... save your money.

I have had this machine for 4 days and have made 4 loaves of 100% whole wheat. Just love it. My ONE AND ONLY complaint is getting the bread out of the pan. If you watch the DVD, it just slips out. Well, none of my loaves have just slipped out. I have a plastic lettuce knife that I use to run around the pan (it is plastic so it won't damage coating on pan). I then have to shake and shake to get it out. Half the time, the kneading paddles will be baked into my bread and I have to dig at least one or both out. Half the other time, I just have two large holes. I know some reviewers have said to remove the dough in the rising cycle and then put back in, but I'm concerned about interrupting the rising to make sure the paddles don't bake into the bread. Other than that, this machine is awesome. If it weren't for the paddles, I'd give it 5 stars. The whole wheat recipe in the instruction book is not disappointing; however, I tweaked it to my tastes. First, I use King Arthur products - 3 c. of bread flour (which is still wheat) and then 2 c. 100% whole wheat or the white whole wheat. I make sure I use the 4 tbl. Vital Wheat Gluten. Instead of the prepacked yeast, I buy the yeast in the jar so I can measure out my 3 tsp. I think the prepacked quick rise yeast is 2.5 tsp. Instead of sugar, I use Agave Nectar or honey (1/4 c). I don't use butter, but 1/4 c. olive oil. I also take it out of the machine 6 minutes prior to finishing. I find that it is softer and moister. I guarantee you will not be disappointed. It rises beautifully and tastes great. Will never buy store bought bread again. So easy to make. Just wished it would slip out of the pan. I wonder if I should use a non-stick spray on the paddles prior to putting in my wet ingredients?

My husband and I love this bread machine. We make bread and also love its dough mixing feature. We have learned to use the bread machine to make dough for pizza, pasta, dumplings, and bagels.

After purchasing the bread machine, we later bought a pasta machine when we realized how easy it was to make the dough for pasta. So, our repertoire of cooking has expanded to not only fresh loaves of bread but also fresh linguine, ravioli, thin crust pizza, asian dumplings and bagels.

My only gripe is that you need a fairly large cabinet to store this bread machine. But this is true of most electric kitchen appliances like a blender, Kitchen Aid, etc.

I have had most of the problems mentioned in the poor reviews like lopsided bread or burnt. I always need to adjust my dough. You just have to watch durng the kneading cycle and eventually you will know what that particular bread dough is supposed to look like. It has been wonderful but the pan showed great deterioration after 3 months. But I was baking a loaf a day then, now it's 2 or 3 a week. Usually I have better luck when adding wheat gluten.

After over a year of infrequent use, this is still the best bread machine we've ever had. It works like a champ, the lesser reviews I've read seem to be more recipe related and not a problem with the machine itself. Other than the beep that you can not disable, I highly recommend you "start" yeast activation in a bit of sugar and warm water. I use regular 'bread machine' yeast, as we've had less than favorable results with the 'quick' yeast. The other recommendation I have is to observe the dough a few minutes after it starts to mix, the dough needs to be the correct consistency, and if it's too moist or too dry, then you may write a bad review for this great machine. Very happy with this product, and that's a year later!
