This book was first published several years ago. While some things may change, isn't it a joy that some of the very best things remain the same? The time-honoured, welcome scent of a cake baking away in the oven, which greeted my family as they returned home from work and school, is surely one of these. Thanks to the Cake Bible, even the simplest cake recipes not only smell but also taste exceptionally good. I have been baking for years, yet this classic reference book has provided me lots of insight. Most informative are Mrs. Beranbaum's notes labled "understanding" which explain the chemistry and mechanics behind the art of baking. I find the measurement charts extremely useful; Mrs. Beranbaum lists ingredients in lbs, grams, AND quantities. If you like to bake, you'll probably find that you, too, cannot do without this book.

this book kept me from completely giving up baking.

moved to high-altitude at 28 @ had nothing but disasters in baking...had to re-teach myself everything I'd already taught myself when i was 6 (my mom didn't learn to cook until she had 3 kids, lost the nanny when we moved back to the states, & my fighter-pilot dad wasn't around often enough to do it for her).

Rose's explanations of the chemistry of baking at high altitude were the BEST! i also found her recipes to be excellent & are ones i use, often. i have some cake decorating talent so none of the pictured cakes are any problem for me.

if you don't have any cake decorating experience, check at Hobby Lobby for classes. they're around $30 for 4 classes of 2 hours each. you can also take additional, higher level classes.

This book has lots of useful information and tips, that you can only get from either a many years of successful baking experience or from the book, like this one. I just got it two days ago and the first recipe I've tried was the carrot ring with white chocolate cream cheese frosting, and it came out everything that was promised in the book and much more than I expected: light, moist, flavorful, simply the best carrot cake I've ever tried. The instructions where easy to follow. I can't wait to try more of her recipes.

I received this book about a week ago and have read nearly all of the sections and recipes for butter cakes, genoise, biscuit, buttercreams, creams, ingredients and equipment. Thus, I haven't gotten to every page yet. The detailed discussions about why cakes work or fail, what ingredients to use and how to mix them are truly excellent. It will help me to analyze other cake recipes that I like or don't like.
I have been looking for the perfect (to my taste, that is) chocolate cake recipe, however, and haven not yet found it. I have made a few of Rose's chocolate cakes and while the flavor is outstanding, I'd like something that's moister with a coarser texture. She tends to emphasize fine-textured cakes - or at least that's how they turned out for me. They are lovely for impressing people with a cake as good as a professional baker will make, but not always what I want. I would like to read about the differences between using butter and oil in cakes. And yes, I love butter, too, Rose.... I'd also like more information on what affects the texture of the cake and how to modify it to suit individual tast.

I purchased this book at the suggestion of a friend who has owned a bakery. I have learned so much about baking from reading The Cake Bible. Rose Leby Beranbaum is so thorough in her explanations concerning baking. I love knowing the reason you do something! It's a great book for the novice baker who yearns to learn more.

The Cake Bible is a must have for any Baker young or old alike I stumbled on it at local book store & found lots of recipes I wanted to try,but I couldn't afford to buy from the book store my sister n law told me about amazon.com & this was my first purchase lost cheaper that the local book store used copy but really I couldn't let it had ever been opened, I love the cook book its got recipes for the new cook & the experienced alike all you have to do is be able to read & follow directions its that simple.There was a recipe for a white chocolate Icing I made it for my mother n law's birthday cake everyone was so impressed it was out of this world,so I made it again for my niece's birthday,it take a bit longer & is a little more expensive but when you want to make to impress a little more cost goes a long way the only thing that coasted extra was the white chocolate but the taste & the compliments from everyone was worth the price of the cook book & the chocolate.Everything I have made or baked has tasted wonderful & I have gotten rave reviews from my family & friends..:)
