I'm from Germany where I grew up in a rural area with huge wagon wheels of bread that had been baked in a wood-fired oven. I thought the bread in German bakeries was just so-so after that, -- but then I came to the States. Good grief, mushy bread?!

Not knowing a thing about baking my own bread, I jumped at the first bread machine that came on the market. ANYTHING was better than American pre-sliced lappy bread! Once I got my feet wet with the machine, I tried to dabble in sourdough, but the results were more flat bread-ish than the sourdough rye I had envisioned.

Bread baking books followed, but there is also something called life and work, and adding dough into that mix that takes up an entire day as a minimum just wasn't feasible. Sometimes I looked at the artisan breads that started to pop up in the supermarkets, but their crust wasn't fresh, so it was easy to resist.

I saw this book at BJ's the other day and leafed through. Buying it wasn't brain surgery: this made sense! I'm so glad I did, because baking has never been more fun! Home-made soup and a chunk of freshly baked bread with a side of mixed greens will be on the menu much more often! Love, love, love the technique, and, as other reviewers have already stated, I will start messing with the basic dough before long as well.

The upcoming "healthy bread in five minutes" book is already on pre-order. And my world is finally whole again, although I still miss the wagon wheels that had bits of wood charts embedded in the 1/4" crust...

Love the idea of giving this book as a gift together with the paddle and unglazed tile.

If you haven't tried baking but love good bread, by all means, go for it! I remember the first bread: I almost sat in front of the oven, and I felt like dancing when the loaf started to rise, and rise, and rise, instead of spreading out and going flatter and flatter...

Okay -- I didn't believe that it was possible to make bread in 5 minutes when I picked up this book...I tried it and it took more than 5 minutes BUT it didn't take the usual all day to bake bread that was actually good. This book is great for the beginner baker. It shows the reader the basic "how to's" in a way that is not overwhelming. This is a keeper.

I am often extremely skeptical when I see cookbooks claiming to teach you how to do something in X many steps or in X many minutes a day. When I pass the ever-growing section of Rachel Ray 30 minute whatevers at the bookstore, I find myself choking back vomit. Real cooking, real food in my experience, often doesn't have quick fixes, until now.

Armed with my Joy of Cooking I've been toiling on for months trying to make good homemade bread in my kitchen. My attempts have been successful for the most part, but my breads are always too soft with weak crusts and aren't good for much of anything but buttered toast. I've always dreamed of making breads that I could make thick hearty sandwiches of, bread that's sturdy enough to be truly useful for everyday purposes. These are the breads I eyed with longing at Whole Foods and Central Market, wishing I could get that same yeasty inner texture, the same crackling outer crust. When my mother, a long-standing fan of her bread machine *shudder* sent me this book in the mail, my skeptic meter went off the charts as soon as I laid eyes on the cover. Oh how wrong I was.

While most of the breads in this book aren't truly made in "5 minutes a day" (letting the dough warm to room temperature and baking it takes up to an hour) it is now possible for you to have near effortless fresh-baked bread every single day. It's something that a busy mom or working individual can manage with very little trouble, and be rewarded with fresh bread. The techniques used are well laid out and clearly explained in a voice that suits the culinary dabbler without sounding either snobbish or condescending. Small tips and tricks scattered throughout feel like a good friend sharing their discovered household hints with you. On my first attempt at the simple French boule, a loaf the book insists you should master first before trying other more advanced loafs, I was met with an amazing success. A friend who was over teased that I slipped away to the grocery store and bought a boule while he wasn't looking. I spent moments staring at the bread in disbelief after removing it from the oven, thinking that perhaps my friend was right. I'd never made bread that looked, smelled, or sounded so delicious.

So as I sit here, munching away on a panini sandwich made with now one of my many successful loaves of bread (each one better than the next) I can honestly tell you that I am a convert. The techniques that this book claims "revolutionize home baking" truly, truly do. I can promise you, if you were suffering from the same drab bread blues as I was, buy this book. You will NOT be disappointed, and you will always have the yummiest, tastiest, most deliciously satisfying bread gracing your breakfast, lunch, and dinner table.
